The builder kitchens out here share a template. A soffit runs the length of the wall cabinets, the ceiling stops at eight feet, and a wall stands between whoever is cooking and everyone else. That soffit is usually either hollow or carrying a duct that can be rerouted, which is what lets 30-inch uppers become 42-inch and makes the ceiling read taller without touching the roofline. Where the dividing wall is a partition rather than structure, removing it is what finally turns a galley into the room the floor plan was always hiding.
Tile is the other Kendall constant. Slabs poured in that era are rarely flat enough for the large-format porcelain everyone wants now, so the floor gets flattened before a single tile is set. Skipping that step is exactly how you end up with lippage along the edge of a 24x48 plank.
